Bonfire Night Treats
Guy Fawke's Night isn't complete without some warming treats to feed the family
Some of our best childhood memories are wrapped up with food. And one of the best of those has to be memories of cradling hot mugs of tomato soup while the sky above you lights up with fireworks. Back To The Table isn't just about eating around the dinner table - it's about sharing all kind of experiences as a family. So we hope you enjoy these Bonfire Night recipes.
Toasty Tomato Soup
Ingredients:
1oz butter
1 medium sized onion, chopped
1 small potato, chopped
450g (1lb) tomatoes, quartered
1 bay leaf
2 tbsp tomato puree
400ml (16 fl oz) vegetable stock
Salt and pepper to taste
Method:
Melt the butter in a saucepan and fry the onion until soft. Add the potato, tomatoes, bay leaf, tomato puree and stock. Bring to the boil, cover and simmer for 20 minutes. Remove the bay leaf if used, and puree. Push through a sieve to remove the seeds and skins.
Bonfire Bangers
Ingredients:
450g of cocktail or chipolata sausages
1-2 tbsp clear honey
1-2 tbsp Dijon mustard
2 tbsps of fresh orange or apple juice
Few drops of soy sauce
1 tsp sesame seeds
Method:
Microwave the honey for about 30 seconds. Add the mustard and fruit juice, stir well. Pour over sausages, making sure they’re well covered. Spread the sausages on a baking sheet and cook in a medium oven for 20-30 minutes, basting once or twice. Sprinkle with sesame seeds before serving.
Toffee Apple Torches
Ingredients:
6 medium eating apples
8oz (250g) granulated sugar
1/8 pint/65ml water
Pinch of cream of tartar
Method:
Heat the sugar, water and cream of tartar in a non-stick saucepan, stirring until the sugar is dissolved and the mixture boils. Boil, without stirring, until the toffee reaches the crack stage (290F, 145C). You’ll know it’s ready when the mixture turns pale brown and it turns solid when a small piece is dropped into cold water. Wash and dry the apple and stick them on a stick or wooden skewer. Dip into the toffee mixture until well coated and then stand on a greased tray to set with the sticks upright.
