have been swapping cookery tips,
supper suggestions and recipes on our
Back To The Table forum.
Here's a selection of some of the
great family recipe ideas they've come
up with, starting with the now-famous
Mollucated Potatoes!

Mollucated Potatoes

"This is a really nice way to have spuds without having to bother to peel them or have the oven on for hours."

Method:
Boil some nice potatoes ( King Edwards or Maris Pipers are the best I think) with skins on until soft.
Drain and place on baking tray whole.
Smash each potato once or twice with a potato masher, just give 'em a good whack so they 'split'....if they completely crumble, don't worry - they're even nicer!
Drizzle over some olive oil, rock salt and pepper
Bung in a preheated oven (200 degrees) for about 30 minutes. They are extra nice if you pop some grated cheese over the top about 5 minutes before serving.
They go all crunchy on the outside so the kids will eat the skin, without having to bake a spud in the oven for hours. The insides are really puffy and gorgeous. Would be fabulous for after firework night etc when the kids come in all cold and hungry!

Spice Cake

"Made this one afternoon with the kids when it was a horrid wet rainy day."

Method:
Mix 8 oz self-raising flour & 2 tsps mixed spice (set aside)
put all these ingredients (below)....
3oz sugar, 2 tbsp marmalade or apricot jam, 2 tbsps golden syrup,3 tbsps water & 3oz butter/margarine
...into a pot & melt over low heat...
Mix dry & wet mixes together along with 1 beaten egg and add 4oz fruit of your choice(sultanas, chopped apple, dried apricots, glace cherries, nuts etc)
Stick into a 6-8 inch tin greased and lined in the oven for 1 1/4 hrs at gas mark 4

Tuna Pasta Bake

"Mine cannot get enough of this - even my 10 month old!"

Method:
Boil up some pasta in one pan. In the other make up a packet of white sauce, add tins of Tuna and a tin of sweetcorn. When both pans are cooked, mix it all together, put it in a dish, grate some cheese on top and grill until brown.
I can easily have it on the table in less than 20 mins...

Chickpea Curry

"I use dried chickpeas that need soaking overnight and then cooking on a boil for 15 mins, then simmered for an hour, but you could always buy tinned that are pre-cooked - rinse them in fresh water though, after draining them, to get rid of the salt."

Method:
Fry an onion, some peppers cut up small and whatever else you fancy in a splash of oil, then add half a teaspoon of cumin seeds and half a teaspoon of ground coriander.
Add in a third of a tin of chopped tomatoes and a wee blob of ketchup, then add a handful of chickpeas and simmer for about 20 minutes, stirring regularly.
Frozen mixed veg is really good to add to it as well, gets a few more veggies down his neck, LOL!
I serve it with basmati rice, which my son particularly likes if it is bright yellow with tumeric.

Cheat's Orange Cheesecake

1 packet of orange jelly,
boiling water,
1x200g packet of digestives
125g of marg or butter melted,
2tbsp of brown sugar,
1x 200g of soft white cheese philly works well here
4tbsps of caster sugar,
zest of orange and juice of said orange,
1 small carton of double cream
cinnamon to decorate

Break up the jelly in a mug and make up 1 mug of boiling water and stir till dissolved tip in bowl and add another add half cup of boiling water mix and leave to the side.
Mix the biscuits with the melted marg or butter and brown sugar turn into 20cm/8in flan tin press the sides and base firmly to make a case.
Mix the cheese and caster sugar together with the juice and zest of the orange. Whisk in the cold not set jelly. Whip the cream with the same whisk and gently stir in the orange mixture.
Tip the mixture into flan case and chill till set decorate with a dusting of cinnamon, if liked.
...then scoff!

Sausage and Bean Casserole

Method:
Brown approx 8 good quality sausages in the frying pan then transfer to slow cooker.
Slice an onion and add.
Add a tin of cannellini beans (rinse under cold water first)
Add a tin of baked beans in tom sauce
Add a tin of tomatoes or carton of passata
Add approx 1/4 pint of vegetable stock
add 1/2 teaspoon rosemary or mixed herbs
Add glass of red wine (if you have any left ... I never do!!)
Add lots of pepper
Mix it all up and leave in slow cooker bubbling away all afternoon .........then enjoy with some lovely crusty bread
